Top wines for top restaurateurs - for the unique moment of enjoyment in the glass. If you want to leave an unforgettable impression on your guests, you should leave nothing to chance. This also applies to the selection of wines.

All the more important to be able to rely on an experienced and renowned partner. Adrian & Diego Mathier Nouveau Salquenen AG from the Valais is a three-time best Swiss winemaker of 2018, 2011 and 2007. Uncompromising quality - whether classics or specialities - has played a decisive role in the wines of the best Swiss winemaker of the decade, Diego Mathier, for decades.

The result is more than 1,000 international and national gold medals, awards and prizes that the traditional family business has received to date, including numerous Swiss and world championship titles. From the successful winemaker's range alone, which includes almost sixty different wines, a varied and diverse wine list could easily be put together. However, as is well known, the purchase and storage of wine in the gastronomy sector cause not inconsiderable costs. With his wine creations, the successful winemaker consciously takes the needs of the gastronomy into account and offers wines in his assortment that guarantee unforgettable moments of pleasure as accompaniments to as many different dishes as possible.

The Cuvée Madame Rosmarie Mathier red is such a passe-partout and refines virtually all meat dishes, from pork to veal, lamb, beef and game. The three-time Swiss Champion Assemblage red - and thus the best red wine assemblage in Switzerland - is created from four grape varieties. Cabernet Sauvignon gives the cuvée complexity and structure. The Syrah is responsible for the fine pepper note, the Merlot gives the red wine its spicy note, and the Pinot Noir with its silky elegance guarantees the subtle finishing.

The counterpart to the red blend is the Cuvée Madame Rosmarie Mathier white. Twice the best white blend in Switzerland, it has a beautiful freshness and a rich bouquet of aromas, which it owes to Petite Arvine. The Pinot Gris gives this excellent wine its powerful character, while the Sylvaner provides the necessary length in the finish. And with a nice acidity, the Heida, as the fourth grape in the glass, strengthens the backbone of this cuvée, which accompanies dishes of poultry, saltwater fish and crustaceans, but also Asian and vegetarian dishes as well as the apéritif excellently.

Two wonderful creations with cult status from the house of Mathier, which are exclusively reserved for the gastronomy, are carried in the range as Optimo red and Optimo white. Both blends are made from grapes from Valais Grand Cru vineyards. For the Optimo red, Cabernet Sauvignon, Syrah, Gamaret, Diolinoir and Ancelotta are each individually vinified in the cellar before being married and matured for nine months in oak barrels to reach optimum perfection and bottled unfiltered. The red assemblage impresses with its deep dark colour, supported by a finely integrated barrique as well as a very present tannin structure and is an ideal companion to apéritifs, game specialities and all dishes with red meat. Its white sister, the Optimo white, is a composition of the grape varieties Heida, Sylvaner, Amigne and Ermitage. They, too, are first vinified individually before being married for nine months in oak barrels and then bottled unfiltered. The wine is matured dry and presents itself powerful and long-lasting, with a beautiful harmony and finely integrated barrique. Optimo white is an ideal accompaniment to apéritifs, raclette, fondue and fish specialities from fresh water or the sea.
